Place all of the ingredients into a large bowl. Toss together well and serve immediately.
Ingredients
- 2 handfuls fresh flatleaf parsley leaves, roughly chopped
- 2 celery stalks, finely chopped
- 3 tomatoes, deseeded and chopped
- 100g/3½oz feta, cut into cubes
- 2 tbsp tinned cannellini beans, rinsed and drained
- 1 lemon, juice only
- 1 tbsp olive oil
- 2 tbsp black olives, pitted
