Glazed sweet and sour chilli carrots

Method

Melt the butter in a frying pan over a medium heat and add the sugar.

Add the carrots and the chilli powder and cook for one minute.

Add the red wine vinegar and simmer for two minutes.

Transfer the carrots to a serving dish and garnish with a sprig of parsley.

- 150g/5½oz baby carrots, tops trimmed
- 1 tsp chilli powder
- 1 tbsp red wine vinegar
- sprig fresh parsley, to garnish
