Ginger, orange and vanilla rice pudding

Method

Place the milk into a pan over a low heat and heat gently until simmering.

Add the rice, sugar, vanilla pod and seeds, orange juice and zest, ginger pieces and ginger syrup to the pan. Simmer for 8-10 minutes, or until the rice is tender.

To serve, pour into bowls and garnish with the blueberries and orange slices.

- 500ml/18fl oz whole milk
- 250g/9oz pudding rice
- 50g/2oz caster sugar
- 1 vanilla pod, split and seeds scraped out
- 1 orange, juice and zest
- 2 pieces stem ginger, finely chopped
- 1 tbsp ginger syrup (from jar of stem ginger)
To serve
- 1 tbsp blueberries
- 1 orange, sliced
