Method

Combine the sugar with three tablespoons of water and heat on a low heat until the sugar dissolves.

Remove from the heat and allow to cool.

Once cool, place the sugar in a blender with the cherries, lime juice, tequila, cherry liqueur or Cointreau, and the ice.

Blend until smooth, and serve in martini glasses with a sugared rim.

- 50g/1¾oz caster sugar
- 175g/6¼oz cherries, stemmed and stoned
- 4 tbsp lime juice
- 150ml/5¼fl oz tequila
- 3 tbsp cherry liqueur or Cointreau
- 275ml/10fl oz ice
