For the scones, mix together all of the scone ingredients except for the butter. Bring together to make a dough. Divide into six pieces and shape into rounds.
Melt the butter in a frying pan over a high heat. Add the scone rounds to the pan and fry for one minute on each side or until risen and golden. Transfer to a plate.
Meanwhile, to make the sauce, heat the double cream in small pan. Add the butter, caster sugar and honey and cook for five minutes over a high heat.
Drizzle the hot cream mixture over the scones and serve.
