Crusted tuna with pineapple relish

Method


  1. Dip the tuna steak in the egg white and then coat in sesame seeds.

  2. Heat the oil in a non-stick frying pan and fry the tuna for 2-3 minutes on each side, or to personal taste.

  3. For the relish, place the fresh mint and coriander in a bowl. Add the oil, caster sugar, lime juice, pineapple and salt and freshly ground black pepper. Toss together to coat.

  4. To serve, transfer the crusted tuna to a serving plate and spoon the relish alongside.

Ingredients

For the tuna

  • ½ tuna steak
  • 1 free-range egg white
  • 4 tbsp sesame seeds
  • drizzle oil

For the relish

  • handful fresh mint
  • handful fresh coriander
  • 1 tbsp olive oil
  • 1 tsp caster sugar
  • 1 lime, juice only
  • ½ pineapple, peeled and chopped
  • salt and freshly ground black pepper
