Crusted tuna with pineapple relish

Method

Dip the tuna steak in the egg white and then coat in sesame seeds.

Heat the oil in a non-stick frying pan and fry the tuna for 2-3 minutes on each side, or to personal taste.

For the relish, place the fresh mint and coriander in a bowl. Add the oil, caster sugar, lime juice, pineapple and salt and freshly ground black pepper. Toss together to coat.

To serve, transfer the crusted tuna to a serving plate and spoon the relish alongside.

For the tuna
- ½ tuna steak
- 1 free-range egg white
- 4 tbsp sesame seeds
- drizzle oil
For the relish
- handful fresh mint
- handful fresh coriander
- 1 tbsp olive oil
- 1 tsp caster sugar
- 1 lime, juice only
- ½ pineapple, peeled and chopped
- salt and freshly ground black pepper
