Crispy noodle cake with stir-fried beef

To make the crispy noodle cake, stir the soy sauce and sesame oil into the cooked noodles. Heat the vegetable oil in a small frying pan, add the noodles and cook for three minutes on each side. Remove with a slotted spoon and drain on kitchen paper.

To make the stir-fried beef, heat the vegetable oil in a frying pan, add the spring onion and cook for two minutes. Add the garlic, chilli and ginger and cook for one minute. Add the beef and stir fry for 1-2 minutes. Stir in the sugar snap peas.

To serve, pour the stir-fried beef onto the crispy noodle cake.

- 1 tbsp soy sauce
- 2 tsp sesame oil
- 125g/4½oz egg noodles, cooked and drained
- 2 tsp vegetable oil
For the stir-fried beef
- 1 tbsp vegetable oil
- 1 spring onion, roughly chopped
- 1 garlic clove, chopped
- ¼ red chilli, finely chopped
- pinch ground ginger
- salt and freshly ground black pepper
- 100g/3½oz sirloin beef, thinly sliced
- 75g/2½oz sugar snap peas
