Preheat the grill to its highest setting. When hot, place the cheese slices onto a baking tray and grill for 1-2 minutes on each side, or until golden-brown and crisp on both sides.
Mix the onion, tomato and coriander together in a bowl, drizzle over the olive oil and season with salt and freshly ground black pepper. Mix well to coat in the oil.
To serve, place the salad in the middle of a serving plate and arrange the crisp goats' cheese rounds on top.
