Method

Melt the butter in a saucepan. When foaming add the onions and sweat for three minutes.

Add the peas and cook for a further four minutes.

Add the stock and cream and cook for one minute.

Blend the soup in a food processor and serve in a large bowl garnished with the chopped parsley.

- ½ red onion, diced
- 25g/1oz butter
- 200g/7oz peas (tinned or frozen, thawed)
- 300ml chicken or vegetable stock
- 100ml double cream
- 2 tbsp parsley, chopped
