Place the chocolate into a bowl set over a pan of simmering water (make sure the bottom of the bowl doesn't touch the water surface). Leave to melt for 5-6 minutes.
Dip the strawberries into the chocolate and place on a silicone mat set on a baking sheet. Place into the fridge for 15-20 minutes to set. Serve.
