Combine all of the ingredients in a bowl and mix thoroughly to combine. Serve on a plate with an extra drizzle of balsamic vinegar.
Ingredients
- ½ red onion, finely chopped
- 1 clove garlic, finely chopped
- ½ beef tomato, de-seeded and finely chopped
- 3 mini white pitta breads, torn into small pieces
- 2 tbsp canned cooked chickpeas, rinsed and drained
- 55g/2oz spinach leaves
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar, plus extra to serve
- 6 fresh basil leaves, torn
