Carrot, horseradish and cheese salad

Method

In a bowl, mix together the carrot, horseradish and spinach.

In a new bowl mix together the oil, mustard and vinegar and season, to taste, with sea salt and freshly ground black pepper.

Pour the dressing over the salad mixture and toss well to coat.

Sprinkle over the cheese and serve.
Ingredients
- 1 carrot, grated
- 2 tbsp grated, fresh horseradish
- 55g/2oz spinach, chopped
- 2 tbsp olive oil
- 1 tsp wholegrain mustard
- 1 tbsp white wine vinegar
- sea salt and freshly ground black pepper
- 25g/1oz cheddar cheese, grated
