Preheat the oven to 180C/350F/Gas 4.
Place the double cream, cardamom seeds, egg yolks, maple syrup and cinnamon into a pan and heat gently, stirring continuously.
Press a bread circle into the base of two ramekins, then pour over some of the egg mixture. Repeat with two more layers of bread and egg mixture, ending with a layer of egg mixture.
Place in the oven and bake for ten minutes, or until set and golden-brown on top. Dust with icing sugar and serve.
