Broccoli, pomegranate and orange salad

Method


  1. Place the broccoli, herbs and orange pieces into a bowl. Scatter over the sesame seeds, drizzle over the oil and vinegar and mix well.

  2. To serve, sprinkle the pomegranate seeds over the salad.

Ingredients

  • 1 head broccoli, cut into florets, blanched
  • handful fresh basil
  • handful fresh parsley, chopped
  • handful fresh coriander, chopped
  • 1 orange, peeled, chopped
  • 1 tbsp sesame seeds
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 50g/1¾oz pomegranate seeds
