Breaded plaice with herbed rice salad

Method

Coat the plaice fillets in flour, then in the beaten egg and finally in the breadcrumbs.

Heat the oil in a non-stick frying pan and fry the fillets for 2-3 minutes on each side, until golden brown.

For the salad, mix the rice, pepper, orange juice and fresh herbs into a large bowl.

Spoon the rice onto a serving plate and serve the breaded fillets alongside.
Ingredients
- 2 plaice fillets
- 30g/1oz plain flour
- 1 egg, beaten
- 30g/1oz white breadcrumbs
- 1-2 tbsp olive oil
For the rice salad
- 110g/4oz basmati rice, cooked
- ½ red pepper, diced
- 1 orange, juice only
- 3 tbsp parsley, chopped
- 3 tbsp coriander, chopped
