Toss the cooked noodles with the olive oil in a large serving bowl.

Add the rest of the ingredients, toss together and season before serving.

- 100g/3½oz noodles, cooked according to packet instructions
- 1 tbsp olive oil
- ½ mango, peeled, stone removed, diced
- 2 salad onions, white only, shredded
- 1 red chilli, seeds removed, finely chopped
- salt and freshly ground black pepper
