Apple onion salad with blue cheese dressing

Method

Heat the oil in a frying pan, add the onion and cook for 3-4 minutes over a low heat until softened. Transfer to a bowl with the apple.

In a separate bowl, mix the blue cheese with the vinegar and the wholegrain mustard.

Gradually add the oil, whisking constantly. Pour the mix onto the apple and red onion and serve.
Ingredients
- 1 tbsp olive oi
- l½ red onion, diced
- 1 apple, cored and sliced
For the blue cheese dressing
- 25g/1oz Dolcelatte cheese
- 3 tbsp white wine vinegar
- 1 tbsp wholegrain mustard
- 50ml olive oil
