Vegetable broth

Method


  1. Place the vegetables and stock into a saucepan and bring to the boil.

  2. Season, to taste, with salt and freshly ground black pepper and simmer for 10-15 minutes, or until all of the vegetables are tender.

  3. To serve, ladle the broth into two soup bowls and sprinkle over the chives.

Ingredients

  • ½ onion, roughly chopped
  • 2 carrots, roughly chopped
  • ¼ potato, peeled and roughly chopped
  • 300ml/½ pint chicken or vegetable stock
  • salt and freshly ground black pepper
  • 2 tbsp chopped fresh chives, to serve
