Vanilla rice pudding with honey and cinnamon oranges

Method


  1. For the vanilla rice, place the rice, milk, cream, sugar and vanilla pod into a non-stick saucepan. Stir well and cook gently for five minutes or until the rice has softened but still retains a little bite. Remove the vanilla pod as this can be re-used.

  2. For the oranges, place the segmented oranges into a small bowl. Sprinkle the cinnamon and drizzle the clear honey over the top.

  3. To serve, place the rice pudding into a clean bowl. Sprinkle with ground cinnamon on and serve with the oranges on the side.

Ingredients

For the vanilla rice

  • 150g/5½ oz risotto rice
  • 200ml/7fl oz milk
  • 100ml/3½fl oz double cream
  • 1 tbsp caster sugar
  • 1 vanilla pod
  • pinch ground cinnamon, to garnish

For the honey and cinnamon oranges

  • 1 orange, segmented
  • 1 tsp ground cinnamon
  • 2 tbsp clear honey
