Vanilla-poached apricots

Method


  1. Bring the water to simmering point in a saucepan. Add the vanilla pods and seeds, sugar, rum, limes and whole apricots. Stir until the sugar melts, and poach the apricots for 12 minutes.

  2. To serve, pour into a large warm bowl.

Ingredients

  • 250ml/9fl oz water
  • 2 vanilla pods, split and seeds scraped out
  • 50g/2oz brown sugar
  • 1 tbsp rum
  • 2 limes, sliced in half
  • 5 ripe apricots
