Tuna tartare with sesame, soy and lime dressing

Place the tuna into a bowl, add the lime juice and zest, sesame oil, soy sauce and herbs and mix well. Cover the bowl with cling film and leave to marinate for ten minutes.

To serve, place a chefs' ring onto a small serving plate and fill with the tuna tartare. Remove the ring and garnish with lime wedges.

- 85g/3oz raw tuna steak, very finely chopped
- 1 lime, juice and zest
- 2 tsp sesame oil
- 1 tbsp soy sauce
- small handful fresh coriander leaves, chopped
- small handful fresh mint leaves, chopped
- 1 lime, cut into wedges, to garnish
