Method

Mix the mango with the avocado and cherry tomatoes.

Add the lime juice, chopped herbs, red onion and olive oil and mix together.

- ½ avocado diced
- 4 cherry tomatoes, sliced
- 1 lime, juice only
- 3 tbsp parsley, chopped
- 3 tbsp coriander, chopped
- 3 tbsp red onion, diced
- 4 tbsp olive oil
