Tomato, avocado and mango salad

Method


  1. Mix the mango with the avocado and cherry tomatoes.

  2. Add the lime juice, chopped herbs, red onion and olive oil and mix together.

  3. Serve.

  • ½ mango sliced into thin strips
  • ½ avocado diced
  • 4 cherry tomatoes, sliced
  • 1 lime, juice only
  • 3 tbsp parsley, chopped
  • 3 tbsp coriander, chopped
  • 3 tbsp red onion, diced
  • 4 tbsp olive oil
