Preheat the oven 225C/425F/Gas 7.
Whisk together the eggs and milk and then gradually whisk in the flour to make a smooth batter.
Heat the oil in a small oven-proof pan over a medium heat. Add the sausages and cook on all sides until browned.
Pour the batter into the pan with the sausages and transfer to the oven to cook for 15 minutes, or until risen and golden.
For the tomatoes, heat a separate oven-proof pan with the oil. Add the garlic cloves and tomatoes and sauté for three minutes over a medium heat.
Transfer to the oven and roast for five minutes.
Remove the tomato pan from the oven and add the balsamic vinegar.
Add the basil and coriander and stir through when ready to serve.
Serve the toad-in-the-hole with the tomatoes beside.
