Roll the mint leaves in the palms of your hands to bruise them slightly and release the mint aromas.

Place the bruised mint leaves into a highball glass and cover with ice.

Pour over the bourbon, apple liqueur and cranberry juice, then top up with the ginger ale.

To serve, hook the apple slice over the edge of the glass. Garnish with a sprig of mint.

- 5-6 fresh mint leaves, plus extra to garnish
- 25ml/1fl oz bourbon whiskey
- 25ml/1fl oz apple liqueur
- 25ml/1fl oz cranberry juice
- splash American ginger ale
- 1 slice red apple, to garnish
