Thai salmon and lemongrass broth

Method


  1. Place the coconut milk, spring onion and lemongrass into a small saucepan and bring to a gentle simmer.

  2. Add the salmon and cook for 1-2 minutes. Stir in the coriander, salt and freshly ground black pepper

  3. Serve straightaway poured into a soup bowl.

Ingredients

  • 200ml/7fl oz coconut milk
  • 1 spring onion, thinly sliced
  • 1 stick lemongrass, roughly chopped
  • 125g/4½oz salmon fillet, sliced
  • small handful fresh coriander
  • salt and freshly ground black pepper
