Thai green curry mussels

Heat the oil in a frying pan and add the curry paste. Fry for 2 minutes, then add the white wine and lime juice.
Cook for a further 2 minutes and add the cream, mussels and coriander. Simmer for 5 minutes. Discard any mussels that have not opened.
To serve, pour into a warm bowl and garnish with chopped coriander.
- 1 tbsp olive oil
- 2 tbsp ready-made Thai green curry paste
- 50ml/2fl oz white wine
- 1 lime, juice only
- 150ml/5fl oz double cream
- 150g/5½oz green-lipped mussels, de-bearded and cleaned
- small bunch coriander, roughly chopped, plus extra leaves to garnish
