Sweet and sour pork served on chard leaves

Method


  1. Heat the oil in a large frying pan. Add the pork and fry for three minutes on each side, until browned.

  2. Add the prunes, leek, Tabasco sauce, tomato sauce and soy sauce and cook for a further five minutes.

  3. Add the honey, orange segments and coriander and cook for a further two minutes.

  4. To serve, lay the chard leaves flat on the plate and top with the sweet and sour pork.

  • 2 tbsp olive oil
  • 100g/3½oz diced pork
  • 3 prunes, chopped
  • 2 baby leeks, chopped
  • 1 tsp Tabasco sauce
  • 2 tbsp tomato sauce
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 3 orange segments
  • 1 tbsp fresh coriander, chopped
  • 5 raw chard leaves
