Sweet and sour pork served on chard leaves

Heat the oil in a large frying pan. Add the pork and fry for three minutes on each side, until browned.

Add the prunes, leek, Tabasco sauce, tomato sauce and soy sauce and cook for a further five minutes.

Add the honey, orange segments and coriander and cook for a further two minutes.

To serve, lay the chard leaves flat on the plate and top with the sweet and sour pork.

- 2 tbsp olive oil
- 100g/3½oz diced pork
- 3 prunes, chopped
- 2 baby leeks, chopped
- 1 tsp Tabasco sauce
- 2 tbsp tomato sauce
- 2 tbsp soy sauce
- 2 tbsp honey
- 3 orange segments
- 1 tbsp fresh coriander, chopped
- 5 raw chard leaves
