Sweet and sour halibut

Method


  1. For the halibut, brush the halibut steaks with a little oil and season with salt and freshly ground black pepper. Press the breadcrumbs onto both sides of the fish.

  2. Heat a little oil in a pan and fry the halibut steaks over a medium heat for 3-4 minutes on each side, or until golden-brown and cooked through. Set aside in a warm place.

  3. For the sauce, heat the oil in the same pan used to cook the fish, add the shallots, garlic and ginger and fry gently for 3-4 minutes until softened.

  4. Add the cherry tomatoes and cook until they begin to burst open, then add the red wine vinegar, sugar, ketchup and fish sauce and simmer for 2-3 minutes.

  5. To serve, place the halibut steaks onto serving plates and spoon over the sauce. Garnish with coriander and shredded spring onions and serve with jasmine rice.

Ingredients

For the halibut

  • 4 x 175g/6¼oz halibut steaks
  • oil, for brushing and frying
  • salt and freshly ground black pepper
  • 125g/4½oz Japanese panko breadcrumbs, or use brioche breadcrumbs

For the sauce

  • 2 tbsp oil
  • 3 shallots, sliced
  • 2 garlic cloves, crushed
  • 2.5cm/1in piece fresh ginger, cut into matchsticks
  • 225g/8oz cherry tomatoes
  • 30ml/1fl oz red wine vinegar
  • 30g/1oz caster sugar
  • 50ml/2fl oz tomato ketchup
  • 1 tbsp Thai fish sauce

To serve

  • few sprigs fresh coriander
  • finely sliced spring onion
  • steamed jasmine rice
