Place a 7.5cm/3in chef's ring on a serving plate.
In a bowl, mix one tablespoon of melted chocolate with the crushed biscuits and brandy and press into the base of the ring. Transfer to the fridge to chill.
Whip the double cream and icing sugar together to form soft peaks when the whisk is removed.
In another bowl, beat the cream cheese until smooth and add the lime juice.
Gently fold the double cream into the cream cheese mixture, along with the sliced strawberries.
Fill the ring with some cream mixture and drizzle with some of the melted chocolate. Remove the ring and garnish with the strawberries.
Repeat the process until the cream mixture and chocolate sauce is used up.
