Stir-fried lamb with onion, cashews and redcurrants

Method

Heat the olive oil in a pan, add the sliced lamb and fry for 2-3 minutes, or until browned.

Add the onion and red pepper and stir fry over a high heat for two minutes.

Add the chilli flakes, soy sauce, a splash of boiling water, cashew nuts and pak choi and stir fry for 1-2 minutes.

To serve, spoon into a bowl and garnish with redcurrants.

- dash olive oil
- 100g/3½oz lamb chop, bone removed, sliced
- ½ onion, sliced
- 1 small red pepper, sliced
- pinch chilli flakes
- 2 tbsp soy sauce
- 2 tbsp cashew nuts, toasted
- 1 pak choi, halved
- 2 tbsp redcurrants, stalks removed, to serve
