Sticky pork and mango skewers with egg fried rice

Method


  1. Soak two wooden skewers in water for at least ten minutes.

  2. Thread the mango, pork and chilli onto the soaked wooden skewers.

  3. Heat the vegetable oil in a griddle pan. Place the skewers on the pan and cook for 3-4 minutes or until golden-brown all over and completely cooked through, turning the skewers regularly.

  4. Drizzle the honey and soy sauce onto the skewers and sprinkle the sesame seeds on top.

  5. For the egg fried rice, heat the oil in a frying pan. Add the cooked rice and the beaten egg. Cook, stirring continuously until the egg has cooked through.

  6. Stir the coriander and soy sauce into the rice, and season to taste with salt and freshly ground black pepper.

  7. To serve, place the egg fried rice on a clean plate and place the skewers on top.

Ingredients

For the sticky pork and mango skewers

  • ½ mango, peeled and sliced into 2.5cm/1in cubes
  • 100g/3½oz pork sliced into thin strips
  • 1 chilli, cut into rounds
  • 1 tbsp vegetable oil
  • 1 tbsp clear honey
  • 2 tbsp soy sauce
  • 2 tsp sesame seeds

For the egg fried rice

  • 2 tsp vegetable oil
  • 100g/3½oz basmati rice, cooked according to packet instructions
  • 1 free-range egg, beaten
  • small handful fresh coriander, chopped
  • 1 tsp soy sauce
  • salt and freshly ground black pepper
