Method

Heat the olive oil in a saucepan and cook the garlic and onion until soft.

Add the spinach and cook for five minutes.

Add the stock and simmer for five minutes.

Add the cream, season well with salt and freshly ground black pepper and blend with a hand blender until smooth.

Serve in a warm bowl and garnish with a cream swirl.

- 1 tbsp olive oil
- 1 clove garlic
- ¼ red onion, finely chopped
- 150g/5½oz baby leaf spinach
- 300ml/10fl oz hot chicken or vegetable stock
- 50ml/2fl oz double cream, plus extra to garnish
- salt and freshly ground black pepper
