Spinach and lentil cakes

Method

Mix the spinach, lentils, curry powder, egg, flour and chilli flakes together in a bowl. Form the mixture into two patties

Heat the oil in a frying pan and fry the patties for 2-3 minutes on each side until crisp and golden.

Serve with Greek-style yoghurt.

- 150g/5¼oz spinach, chopped
- 85g/3oz Puy lentils, cooked
- 1 tsp curry powder
- 1 free-range egg
- 2 tbsp plain flour
- pinch chilli flakes
- 1 tbsp oil
