Spicy beans on toast with tomato and basil garnish

Method

Heat the oil in a frying pan and gently fry the onion and chilli flakes for 1-2 minutes, or until softened, then add the vegetarian bacon. Fry for 3-4 minutes, or until golden-brown and crisp.

Add the tomatoes and baked beans and cook for 2-3 minutes to warm through.

Serve the beans and bacon on a slice of toast, with slices of tomato and cheddar on top, garnished with fresh basil.

- 2 tbsp olive oil
- ¼ onion, finely chopped
- pinch chilli flakes
- 2 rashers vegetarian bacon, chopped
- 2 tomatoes, seeds removed and chopped
- ½ tinned baked beans, sieved
To serve
- 1 slice white toast
- ½ tomato, sliced
- 25g/1oz grated cheddar
- 5 fresh basil leaves, torn
