Spiced berry whip

Pour the cordial into a tall glass.
Place the yoghurt, orange zest, double cream, whisked egg whites and meringue into a bowl and mix together.
Spoon the mixture into a piping bag. Dip the piping bag into the cordial at the bottom of the glass and squeeze out the cream mixture all the way up to the top.
Garnish with mint and dust with the icing sugar.
- 100ml/3½oz spiced berry cordial
- 250ml/9fl oz Greek yoghurt
- ½ orange, zest only
- 150ml/¼pt double cream
- 2 free-range egg whites, whisked until soft peaks form
- 1 ready-made meringue nest, crushed
- sprig mint, to decorate
- icing sugar, to dust
