Smoked salmon bagel

The classic bagel with smoked salmon and cream cheese gets its healthy makeover. And it makes a great breakfast or lunch.
Method

Spread the cream cheese onto the toasted bagel, cover with the smoked salmon strips and squeeze over the lemon juice. Add the slices of tomato and red onion, then season to taste with freshly ground black pepper.
Ingredients
- 1 wholemeal or 50/50 thin bagel, sliced in half, toasted
- 15g/½oz light cream cheese
- 35g/1oz smoked salmon, torn into pieces
- squeeze lemon juice
- 1-2 slices of tomato
- 1 thin slice of red onion (optional)
- freshly ground black pepper
