Skate with nut-brown butter and tomato and herb salad

Method

For the skate with nut-brown butter, season the skate on both sides with salt and freshly ground black pepper.

Heat the butter with the oil in a frying pan and cook the skate for 3-4 minutes on each side, or until almost cooked through.

Add the capers, lemon juice and olives and warm through.

For the tomato and herb salad, place all of the salad ingredients into a bowl and mix well.

To serve, place the skate onto a plate, drizzle over the nut-brown butter and place the salad alongside.

For the skate with nut-brown butter
- 1 skate wing
- salt and freshly ground black pepper
- 50g/1¾oz butter
- 2 tbsp vegetable oil
- 25g/1oz capers from a jar, drained
- 1 lemon, juice only
- 50g/1¾oz olives, stones removed
For the tomato and herb salad
- 2 tomatoes, chopped
- 1 handful fresh parsley
- 1 handful fresh basil, torn
- 1 tsp balsamic vinegar
- 1 tbsp olive oil
