Method

Bring the chicken or vegetable stock to the boil and turn down to a gentle simmer.

Add the chilli, lemongrass, shiitake mushrooms, soy sauce and sesame oil. Simmer for five minutes, or until the mushrooms are tender.

Serve in a bowl topped with the coriander.
Ingredients
- 300ml/½ pint chicken stock (vegetarians may substitute with vegetable stock)
- ½ tsp chilli, chopped
- ½ tbsp lemongrass, finely chopped
- 100g/3½oz shiitake mushrooms
- 1 tbsp soy sauce
- 1 tsp sesame oil
- handful fresh coriander, chopped
