Shiitake broth

Method


  1. Bring the chicken or vegetable stock to the boil and turn down to a gentle simmer.

  2. Add the chilli, lemongrass, shiitake mushrooms, soy sauce and sesame oil. Simmer for five minutes, or until the mushrooms are tender.

  3. Serve in a bowl topped with the coriander.

Ingredients

  • 300ml/½ pint chicken stock (vegetarians may substitute with vegetable stock)
  • ½ tsp chilli, chopped
  • ½ tbsp lemongrass, finely chopped
  • 100g/3½oz shiitake mushrooms
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • handful fresh coriander, chopped
