Melt 30g/1oz of the butter in a small pan over a medium heat (or in the microwave).
Brush one sheet of filo with melted butter, then place the second sheet over the top and brush with butter again.
Cut the filo layers into small triangles, then sprinkle over the ginger and sesame seeds.
Heat a large frying pan and add the remaining 30g/1oz of butter. Add the filo triangles and cook for 1-2 minutes on each side, until just beginning to become crisp.
To serve, place the sesame filo crisps into a dish.
