Preheat the oven to 200C/400F/Gas 6.
Place two layers of tin foil in a frying pan over a high heat. Add the wine, garlic, shallots and tomato and heat until simmering.
Add the basil, lemon juice and mussels and scrunch the foil closed over the top to form a parcel.
Cook the parcel in the oven for 8-10 minutes. Open up the parcel and discard any mussels that haven't opened.
Serve the foil parcel on a plate.
