Mix the sausage meat, the lime juice and chopped coriander in a bowl.
Mould into three patties and dust in the flour.
Fry in a frying pan for 6-8 minutes or until cooked through.
For the jam, in a pan add the onions with the figs, brown sugar and the white wine vinegar.
Cook for eight minutes on a low heat until soft and syrupy.
To serve, place the patties on a plate with the fig jam on the side.
