Roquefort steak with mushrooms and sweet potato chips

Method


  1. Preheat the oven to 220C/425F/Gas 7.

  2. Heat the oil in an ovenproof frying pan, add the mushrooms and sauté for three minutes, or until softened.

  3. Heat a griddle pan until smoking. Add the steak and cook for two minutes on each side. Place the mushroom and cheese on top of the steak then transfer to the oven for 2-4 minutes, or until cooked to your preference.

  4. To make the chips, heat the oil in an ovenproof pan. Add then add the sweet potato and garlic, fry for three minutes.

  5. Add the rosemary, thyme and butter to the pan and season, to taste, with salt and freshly ground black pepper. Place into the oven for 12-15 minutes, making sure to move the potatoes around once or twice to ensure they cook evenly.

  6. To serve, place the steak and sweet potato chips on a warmed plate.

Ingredients

For the steak

  • 1 tbsp olive oil
  • 1 Portobello mushroom, sliced
  • 140g/5oz sirloin steak, seasoned with freshly ground black pepper
  • 110g/4oz Roquefort

For the chips

  • 1 tbsp olive oil
  • 1 sweet potato, cut into chunky chips
  • 3 cloves garlic, peeled and smashed
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme leaves, chopped
  • 2 tbsp butter
  • salt and freshly ground black pepper.
