Roast vegetable soup

Method

Place the vegetables and flavourings in a roasting tin.

Season with salt and pepper and drizzle with olive oil.

Roast for 20 minutes.

When cooked, transfer into a blender and blend until smooth.

Add some water if necessary and serve.
Ingredients
- ½ red onion, chopped
- ¼ squash, cut into wedges
- 2 garlic cloves
- 1 sprig thyme
- 1 chilli, sliced
- salt and freshly ground black pepper
- 2 tbsp olive oil
- water for blending (optional)
