Scrambled egg with roast tomato

Preheat the oven to 220C/425F/Gas 7.

Rub the inside of the tomato with the garlic and oil and bake in the oven for five minutes.

Meanwhile, heat the butter in a frying pan. Add the spring onion to the beaten egg, then add to the pan. Scramble.

- 1 beef tomato, sliced in half, hollowed out
- 2 garlic cloves, cut in half
- 1 tsp olive oil
- 1 tsp butter
- 2 free-range eggs, beaten
- 2 tbsp spring onions, chopped
