Roast sweet potato and lime soup

Method

Melt the butter in a saucepan. Add the potato, lime and the garlic. Cook for three minutes.

Add the chicken or vegetable stock and honey. Cook for ten minutes. Remove the lime and discard. Blend the soup with a hand blender until smooth.

Serve in a large soup bowl.

- 25g/1oz butter
- ½ sweet potato, peeled and cubed
- 1 lime, cut in half
- 1 clove garlic
- ½ pint chicken or vegetable stock
- 1 tbsp honey
