Roasted figs with balsamic vinegar

Method


  1. Place the vinegar and sugar in a small saucepan and cook at a medium heat until the sugar has dissolved.

  2. Add the fig pieces and cook until they are soft and caramelised.

  3. Place the griddled ciabatta bread on a plate and place the figs on top.

  4. To serve, drizzle the yoghurt and the honey on top and scatter over the thyme leaves.

  • 1 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 2 fresh figs, cut into four quarters
  • 2 pieces ciabatta bread, toasted
  • 2 tbsp Greek yoghurt
  • 1 tbsp clear honey
  • ½ tsp fresh thyme leaves
