Red pepper and shallot salad

  1. In a medium bowl mix the salad ingredients together until well combined.

  2. In a small bowl mix the dressing ingredients together.

  3. Mix the dressing ingredients into salad and serve.


For the salad

  • 1 shallot, sliced
  • ½ pepper, thinly sliced
  • 1 tbsp parsley, chopped
  • 1 tsp rosemary
  • salt and freshly ground black pepper

For the dressing

  • 1 tbsp English mustard
  • 2 tsp white wine vinegar
  • 30ml/1fl oz olive oil
