In a medium bowl mix the salad ingredients together until well combined.

In a small bowl mix the dressing ingredients together.

Mix the dressing ingredients into salad and serve.
Ingredients
For the salad
- 1 shallot, sliced
- ½ pepper, thinly sliced
- 1 tbsp parsley, chopped
- 1 tsp rosemary
- salt and freshly ground black pepper
For the dressing
- 1 tbsp English mustard
- 2 tsp white wine vinegar
- 30ml/1fl oz olive oil
