Red cabbage salad

Method


  1. Heat the oil in a wok. When very hot and smoking add the cabbage and apple. Stir-fry for 4-5 minutes.

  2. Add the ground ginger, red wine vinegar and brown sugar and cook for 10 minutes, stirring regularly.

  3. Serve in a bowl and top with the chopped parsley.

  • 1 tsp olive oil
  • ½ red cabbage, finely sliced
  • 1 apple, peeled and sliced
  • ½ tsp ground ginger
  • 2 tbsp red wine vinegar
  • 1 tbsp brown sugar
  • handful fresh parsley, chopped
