Radish, cucumber, mint, coriander and mooli salad

Method


  1. Combine the ingredients in a bowl and mix thoroughly.

  2. Drizzle with olive oil and add lime juice to serve.

Ingredients

  • 8-10 radishes, finely sliced
  • 1 large cucumber, finely sliced
  • 1 mooli, same size as cucumber, finely sliced
  • 1 small green papaya, peeled and chopped
  • 1 carrot, sliced
  • 1 apple, chopped
  • 2-3 spring onions, sliced
  • small handful fresh mint leaves
  • small handful coriander leaves

For the dressing

  • olive oil, to taste
  • 1 lime, juice only
