Method

Place the yoghurt with the vanilla seeds into a bowl and mix together well.

Place the prunes and juice into a dessert glass.

Add the orange juice and spoon over the vanilla yoghurt.

Garnish with the sprig of fresh mint and serve.

- 150g/5¼oz Greek yoghurt
- 1 vanilla pod, seeds scraped out
- ½ can of tinned prunes with juice
- ½ orange, juice only
- sprig fresh mint, to garnish
